Pine Varietal - Raw Unfiltered Greek Honey from Mt. Pindos
$19.99

The Pine’s mischievous and nutty opening hint of soft caramel, until a delicate pine resin rounds out this amber elixir. Only found in Greece and Turkey and celebrated for high antioxidant and phenolic compounds, it is associated with reduced risk of heart diseases.

Transform your morning by slathering it on a whole grain English muffin, mixing a lovely thick paste with cinnamon and ground flax. At sunset, a Parmigiano-Reggiano or any slightly sweet and nutty cheese will pair well with its subtle mineral flavors.

Oak Varietal - Raw Unfiltered Greek Honey from Mt. Kisavos
$19.99

Greek Oak Honey leads the honey world in antioxidants. It’s also incredibly high in antibacterial levels and beneficial enzymes, but you’ll be forgiven for forgetting that as you become mesmerized by its golden silk-like drizzle, transforming your yogurt or ice cream into euphoric deliverance.

Deliciously dark and sensual, it opens with a seductive toffee flavor balanced by hints of oak and oregano. By the time your palate is enveloped, you will ask yourself: how is something so incredibly pleasurable, so good for you?

Fir Varietal - Raw Unfiltered Greek Honey from the Rugged Mountains of Nafpaktia
$22.99

The rare and ephemeral Fir honey makes an appearance about once every three years, due to its short season of availability and its temperamental relationship with climate, before quickly disappearing, snatched up by aficionados beguiled by its nuanced richness.

Transporting some of the hives across the mainland and into the mountains comes at a cost, and we’ve often come back empty handed. Fortunately for us, Vasilis’ gamble paid off. This year, the gods rewarded our tenacity and grit, not with a mother lode, but with a reminder: take our small offering and savor it. Serve with a sheep or goat cheese.

Heather Varietal - Raw Unfiltered Greek Honey from Mt. Pelion
$22.99

Plan Bee Heather honey is a wonderfully complex, lush, melding of toffee flavors with a delicate, floral and mineral finish. A Heather vintage this pure is a luxury. Our beekeeper managed a fall, rather than spring harvest this year, so the bees were attracted to Heather only, allowing us to offer this rare delight.

A study in Food Chemistry Journal found that, when it comes to antioxidant levels, Heather honey has some of the highest phenolic content which can prevent cellular damage from free radicals, as well as serving as a highly effective antibacterial and anti-microbial agent.

Chestnut Varietal - Raw Unfiltered Greek Honey from Mt. Pelion
$22.99

Pure Chestnut honey is a rarity as it’s often blended with Oak. This vintage is full-bodied and envelops you from the first scent to the final spicy aftertaste; it’s a complex, mysterious, layering of flavors.

Try some on a thick, toasted slice of a dark, nutty bread, with plenty of sweet butter. Drizzle some over a Tuscan Pecorino or Gorgonzola with fresh pears. Use it to marinade or glaze roasts or root vegetables and note the surprised reactions and recipe requests.

The raw Chestnut arrived in very limited amounts, so don’t hesitate if you’re tempted to try.
